This simple meal is satisfying and delicious. We love Aidell’s chicken and apple sausages; they are nitrate free and we can buy them in bulk at Costco. It’s easy to throw together and can make use of your garden abundance (if you’re lucky like we are to have the garden still going strong into September!).
Kale Sausage “Stir Fry”

Prep time: 10 minutes Cook time: 10 minutes
Serves 3 adults (could stretch it to 4 with a few more potatoes and more kale)
Handful of kale (from your garden if you can!)
3 green onions (again, from your garden!)
3 Aidell’s Chicken and Apple Sausages
4 Yukon gold potatoes
Chop the kale, green onions, and sausage (they’re fully cooked so no worries on contamination). Using the big bladed side of your box grater, slice your [scrubbed but skin on] Yukon golds. In a fry pan heated over medium heat, throw in all your ingredients along with a tablespoon of olive oil. Toss to cover in olive oil, adding more if desired. Once ingredients are coated, add a 1/4 cup water and cover. Let steam for 8-10 minutes until potatoes are soft but not mushy and the sausage is warmed through. Remove from heat, serve into bowls, and top with grated parmesan cheese and salt and pepper to taste.
